Most fantasy races are just humans with an altered appearance. Elves are humans with big ears. Dwarves are humans but short. Goblins are humans but short and green.
To actually come up with new races who have unique anatomy, behavior, and cognition all while trying to build societies and cultures around them takes immense amounts of time. It's easier to just copy and paste human behavior onto the recycled fantasy races you mentioned.

Ever dealt with an 15+ senior non-software engineer? They act a lot like dwarves. In short they represent the ingenuity and curiosity of humanity.

Orcs are in short the barbarians of the fantasy races. They are thick brutes that take what they want with strength. Half-orcs exist not out of love but of rape from orcs. The orcs obviously reflect the more primitive side of humanity. But due to Warcraft and DnD sort of normalizing orcs and integrating them into the 'main' races, that savage barbaric stereotype has been delegated to goblins now.

Humans are the catch all race. Which is why you see blacks and whites being blended among each other. Unlike in our real world, black humans and white humans are no different. They dont have any cultural differences what so ever. The only other human that seems to be different are desert dwelling humans, typically resembling arabs or turks, and asian humans who just reflect what china or japan is but in a fantasy setting.
The reason why blacks tend to mingle with whites in fantasy settings is because orcs/goblins inhabit their stereotype.

The Dark Urge is it's own story mode (mostly just special interactions), and while it isn't required to pick Dragonborn, that's the base race it's set under. Dark Urge is usually picked as the second or third playthrough, so people tend to gravitate picking that race at that point, just to experience the different racial interactions and fill the Dark Urge character vibe more.

To be true, helf provide many stuff for the new players and the dnd "veterans". Free initial cantrips, dark vision, better saving throws against enchantments, movement speed are very useful for any class early on. Also +1 bonus points in 2 characteristics and +2 to charisma, which is useful for almost everything.

Tolkein had some corny ass names and ideas, but it's a reliable way to filter people who claim to enjoy reading. There's a stupid amount of prose and detail, which can be challenging if you only read fan fiction or young adult novels as a 40 year old. The detail isn't even the problem, it's boring to them because it doesn't involve character interaction or drama, or sex/sexual imagery.
