Unironically, the anime/manga that does wizards right, or more aptly, mages, or magic users is Dorohedoro. It's not even medieval fantasy. It's more like a post apocalyptic future dystopia.

The only other manga I've seen come close to it is Witch Hat Atelier.

Wrong argument there is no right/wrong way for magic to work. Re;Zero Kara does the whole magic is mysterious and powerful aspect of fantasy pretty well despite having some hard rules to it that you can intuit yourself without too much explanation needed.
