I don't think people want more Bioshock.
This is the hole all these AAA devs keep falling into. They have some IP that was popular 10 years ago, so they assume everyone will want more of it. Bioshock, Assassin's Creed, Halo, Farcry, etc.
But people actually want new shit. They hop between weird indie titles that are actually trying new things.

Basically all those games you named were good for the first few entries and then the quality sharply declined. BioShock specifically was really great for 1, 2 was decent, and Infinite was dogshit. I would never trust them to actually make anything on the level of 1 or even 2.

I really don't know how these publishers push these demakes when the originals are still cheap and widely available. Like The PvZ demake when the original is on Xbox Back Compat for $5 and is by far the best way to play it. Maybe that's why they oftentimes delist games in preparation for remakes/remasters.

Technical competency isn't the problem so much as a lack of creative vision.
Executive money bugs are incapable of making anything new because they make all decisions based on charts and statistics. You can't have charts and statistics for something that hasn't been done before.
And an army of jeets will never do anything creative because they're just worker drones.
You need devs who actually believe in the project they're making. People who aren't afraid to do something crazy just because they think it's cool.
The executives should only be there to tardwrangle them if they get out of control.

Remaking a game is insanely easier than making something new from scratch, all the ground work is already done for you, it is like these coloring with numbers children picture books. Even THIS is an impossible tasks for these apes.
Modern tools that basically do most of the work for you also exist while back in the day white man had to literally invent the tools himself too.
An it was done in less than 3 years.

I didn't play Bioshock until years after release. The novelty of the world carried the first game. The second game was a step down due to poor pacing. The third game was genuinely a dull slog, in part because the gorgeous world design had lost it's novelty, and all the inherent gameplay problems remained. I doubt 4 would be any better.

People want a certain amount of old, comfortable and new, novel.
The problem is, most of the ongoings are either flooding the market with basically non-iterative sequels, or they're pulling Blue: the Movie: the Game and fucking everything the existing audience likes in the hopes that they'll buy anyway and the changes will attract new people.

Bethesda is one of the best examples of a last few developers where they retained 90% of the original staff after decades and still have the creative ability to keep pushing to make games they want to make. More developers need to follow their example but alas the smell of money is too much for execs to ruin things.

Bioshock and Fallout 3 were the heralds of the modern 'old-timey' category for one particular reason: the music. The music depended on an audience that that was at least familiar with the nostalgic eras through their grandparents; those people are no longer alive. Young people don't know who the Beatles even are anymore, let alone the Ink Spots. Time to explore a new era of that has some mystery.

Capable people won't work for a AAA company. Expect all of them to become like Paradox, with games like Stellaris, where the "developers" essentially just keep adding more DLC based around clicking next for a stat bonus from a dialogue box, scripted using things left behind by someone who now works somewhere else for better pay.

Tim Schaffer can't get a game to be released on a proper schedule without someone managing him and pulling scope back. Literally had to be "saved" by Xbox money to even get Psychonauts 2 released and so much of it was pared down to get it out the door and usable. Especially with how the other interns are introduced and totally irrelevant to the plot past the first full world.

Success of games like the GOTYs for the past 3 years (and most certainly for this year) shows that people want old shit but with twists that make them feel refreshing and very different from past experiences. Makes me think of EUIV. They've been milking that game for more than a decade, the amount of useless DLCs released for it is staggering. Were there any ACTUALLY expanding the game mechanics, like the EUIII expansions? The China and Japan became super fun to play (was it called The Winds of the East?), but recreating the Byzantine Empire never gets old.

Sequels are generally still in demand for franchises that are good, but Bioshock had all its momentum and goodwill killed by how disappointing Infinite was despite getting good reviews at the time so the desire for a sequel is very low.

This also likely contributed to Mass Effect Andromeda flopping because no one really wanted another Mass Effect after 3 regardless of Andromeda's quality.

People want good games with replayability value, without leftist propaganda showed down their throats. No, they don't want every game, ideally none, using the same Unreal Engine, which has been getting worse with each iteration, used for all game genres.
Heroes III is fun to play and looks gorgeous to ths day, because stylization and handcrafted assets plus music fitting the atmosphere (instead of cinematic orchestra slop) always win with games made by souless people, who believe photorealistic graphix and pronouns is what makes a game.
