He's just one of the bigger players in that universe, even without making up headcanon like some resident schizos here Sulyvahn was a mage coming from the painting where the "age" ending is desirable, traveled around and gained some nice bling, when Lothric refused to link the fire Sully allied himself with Aldrich, took the reings as the day-to-day fag in Aldrich's little organisation, then he used his magic to transform some of their knights into beasts guarding the other lords of cinder and marched with Aldrich to Anor Londo to get rid of that pesky fire-linking-failsafe-creating twink faggot. One of the biggest characters in DS3 but it's not like he prevented the previous linking of the fire (there are theories but the material was mostly scrapped and you can name Aldia, Sulyvahn and Kaathe as the guys tempting Lothric) or prevented Gundyr from saving the day.

It's ironic Souls games are progressively more souless each iteration.

It's quite explicit that Dark Souls 3 is the actual sequel Miyazaki would have made as 2, being directly tied to Londo, the Dark Lord worship, the painting, the extermination of Demons, the fall of the Gods, and so on
Dark Souls 2 takes a bunch of elements and repurposes them in a soft reboot with no real context attaching it to the original. It's clear it has no narrative vision
