I wasn't sure if a medieval cask beer would have the pressure for carbonation, and I understand that most middle ages beer was drunk flat, but I googled it which led me to a homebrew forum

The actual canon is that they taste terrible since it's medicine made to heal you and not taste good however some people adulterate the potions to make them more pallatable but also to make more profit. The adulterated potions are less effective due to impurities and sometimes are actually poisonous in the short/long term, sort of like how drug dealers mix low quality ingredients with their substances in order to make more profit.
Adventurers who abuse potions end up with cirrhosis more often than not cause of this

In some games they're made out of fruits, which honestly sounds delicious, but in some they're made out of leaves.

Depends on your head canon i guess, personally i like to believe they taste very meh but you can add some flavor to it.

So the healing potion you made is gray/colorless, but you added so many fucking strawberries to hide the shit taste, that the whole potion turned red. Same thing with the blue potion.

In The Witcher they canonically taste really bad and are super high in alcohol, so I assume strong liquor with a shitty gas-like flavor profile, like Chinese Baijiu or shoddy moonshine.
