The new Zeldas do that. At first.
Then you realize the world is mostly empty. All the optional dungeons and caves lead to loot that is mostly trash, the towns are tiny and the NPCs and sidequests feel like they're from an MMO.

The wonder exists as an illusion because then you'll complain that there aren't enough NPCs or that they aren't deep enough or say that the world is too empty or too full of RNG assets or that it takes too long to go anywhere or that the world actually feels too small even still.

the video proves that we're not getting environments like this, if anything. think about it. we had the tech to render landscapes like this a decade ago or even earlier. so where are they? why do zero games have them? Uncharted 4's Africa levels perhaps come the closest but they obviously don't let you explore very far, not comparable to an open world game. and they still don't feel this grand, not even close. the limiting factor is artist time handcrafting an environment at this quality level.

we sometimes get games that are very close to that, you are being overly negative. They are just very very rare. For example Elden Ring environments were pretty epic even though the rest of the game was not that good. BG3 was also a once in a decade (or two decades) release. It is true that it's weird how rare these things are but as I got older and having seen more of people and life, it makes perfect sense. Most people really don't have much of a soul or spark nor do they care about anything nor do they even try working properly towards anything.

if Elden Ring didn't hide its weakness by covering everything in height fog you wouldn't be saying this. Elden Ring does have the epic scale but that's all it has when you look a little closer. it gets the big picture right but has no detail. because it couldn't. no team of humans could build a world that big with actual detail. From specifically also couldn't make that run at over 10 fps but that's a temporary issue. the man hour problem is permanent.
