Non-meme answer: Because it doesn't have anything in the way of interesting locations and scenarios.
Even when people were hating the prequels, it still had very interestnig locations and scenarios from which to set up fun games. It didn't matter that a lot of it was dumb in the movies, fighting against a bunch of droid dekas (sp?) or on the rainy planet with the clones was fun to work with.
Most of everythign in the sequel trilogy is just retreads of what's already been done in Star Wars. Even if the movies were good, there's nowhere interesting to set up gameplay.
Your best bet would be to make something completely new in the era for a game rather than utilize what's been in the sequel movies, at which point you could literally set your game in any era anyway.
