That's not how it works in chess. At the top level anyone can win a game against anybody. It's still an achievement to beat Carlsen, because he's considered one of the best players of all time (if not the best), but this kind of win-to-lose ratio is expected based on his rating. Nobody who knows anything about chess thinks there's anybody even close to Carlsen's level of strength at the moment in all time controls. Hell, Gukesh despite winning the world championship is considered the underdog when paired against not just Carlsen, but also players like Caruana or Nakamura. Back in the times when Fisher gave that one interview, it was much more common to blow your opponent off the board with an opening. E.g. Kasparov had many such games. But since then people's general opening knowledge has gotten much better. One of the top players in the world can no longer hope to crush even an IM in the opening. So at the top level openings more serve as a way to deliver some small sub-optimal novelty somewhere, which your opponent is not familiar with, hopefully leading to a sob-optimal response, and which will then allow you to get a small advantage that you can press in the middle game.

I'm not an expert, but you can't do much if you're afraid of losing pieces. Don't worry about trading as long as you're in a good position afterwards. Like, if I leave a piece open to die (assume it's covered by a pawn), I don't even care if the enemy takes it with the same piece. Enemy bishop takes my bishop, and then I take his with a pawn. My pawn is in a good spot after, and he gained nothing (hopefully). If you refuse to lose anyone, you'll probably run out of moves considering your pieces are slowly moving towards the other side.
