Depends on what you want. Narratively, Yumi's depiction in SV is better as she's kind of a harder, side-aligned foil to Asuka's undying optimism. She works really well in that sense, but that arc is entirely resolved within SV. So what to do from there? Well, people REALLY like Yumi so fuck it, rewire her (and most of the cast's) personality for EV. It's cuter and more fanservicey, sure, but the characterization was sorta going somewhere for a while there. Fuck it if you're in it for the fanservice though.
