For me, it's True Directional Combat (I think it's now called Skyrim Directional Combat or something like that).
It actually makes the combat both fun and challenging without becoming a roll fiesta.
Combine that with some injury mods (Wildcat used to do that IIRC) and you've got yourself a genuinely interesting combat.

Ordinator is what most people use. Which is fine. Spell Perks are also pretty good.
The last one I tried was Aetherial Traveler, which is underrated. Fun for a while.
Definitely use the Experience mod (perks no longer give you levelup XP, only quests, exploration and kills)

Although you didn't ask for it, if you like thievery, I definitely recommend Book of Shadows, I think it's one of the best thief overhauls.
Also a must have mod nowadays is Shadow of Skyrim. It's Shadow of Mordor nemesis system in skyrim.
I genuinely couldn't imagine modded skyrim without it anymore.

it could work, just try it yourself while the animation is playing, so you can fine tune it to perfection(scale+positioning as well), i usually use a mod that make each race got different body shapes, like orc and nords are made like a fridge, whereas altmer are built like a pole, the first two works wonder if theyre become agressor and victim alike, the latter is quite iffy since you ended up have to scale the agressor again to match the absurd height. that being said, the extreme height difference make it hotter with goblins/riekling
