Start playing Demon's Souls (the original), then Dark Souls. Then Dark Souls 1, 2 and 3. Play Bloodbourne on an emulator. Then play Sekiro. After you have played all of these games, you may play Elden Ring.

...and be let down by it, because it's so derivative.

Assuming it's your first Souls game, yes, it's supposed to be hard. I've had three friends/acquaintances quit in the first area because they were treating it like an action game. I suspect you're doing the same thing.

The secret in every souls game is that you can just run past all the enemies straight to the boss fight.

Yeah Elden Ring is pretty damn hard if you're new to this genre.
My advice won't work for the second half of the base game or the DLC, but the general premise of Souls games is that combat is functionally turn based in a real time environment.
You want to attack during the openings your opponent shows. You want to fish for backstabs for easy big damage. You want to guard counter meaty hits to mitigate damage while dealing some of your own.
But also Elden Ring is the final iteration of that philosophy, and so it's going to be so much more brutal than if you played Dark Souls 1. It might not feel that way because of improved movement and jumping, but it is.

All you have to do is kill starscourge radahn with rotten breath or summoning those guys in his boss fight. After that you can max out any elite spirit ash you see. Those spirits will win the game for you as you sit back or spam stuff.

You should know that spacing matters a lot, both when you attack and when the enemy does
nowihng this helps a lot

Don't beat yourself up over it. The essence of all souls games is gaslighting the palyer to think they are bad at the game, when the difficulty is really just jank animations that have no natural flow, contradict basic physics and common sense, and therefore can't be predicted without prior knowledge. Trial and error, you can't go wrong with it. If you persevere for long enough to recognize every enemy attack from the first couple frames, you won't be hit anymore.

You have to be willing to fail and learn from failure to enjoy this game or any soulslike. i.e, you have to be not subhuman
