What's the point of robbing trains for money if you just get a bounty you have to pay off anyway

Because every single thing about this game is exaggerated. In the old west you could kill complete strangers in the middle of nowhere and it would take months or years for anyone to catch up with you, but RDR2 doesn't have that much time so the law, pretty much, immediately knows what's up and where you are. In the old west you could get a couple guys together and rob wagons and trains and live high life for years, eventually you'd get shot or hanged, RDR2 is accelerating that timeline. And since RDR2 isn't a life sim amassing a fortune is pointless because you have no upkeep and you no long term goal that you need a lot of money for. That's why you don't need to be an actual career criminal or trader or whatever. Having more money than you need right now is pointless.

no its not,don't remember swamps or appalachain mining towns in rdr1. you are actively discouraged to go west of blackwater.

Have you tried switching outfits? You can save I believe 4 outfits (including at least one custom!) at your Camp Chest and maybe at Clothing Stores, though I remember to a bug that permanently limits the number of slots to 3. The point is that having one robber outfit and actually using it advantageous. Just roam around in your robber outfit or switch to it right before committing the crime, pull your mask up, do whatever you want, then ride away and once you're sure nobody sees you switch to another outfit. Needless to say take the mask off as well. I've had lawman riding right past by me while having a Bounty on my head with this method. Granted it wasn't for train robbery (which is generally underdeveloped in free roam) but the mask ins not a magical "Stealth: ON" button.

A big theme of the second game is how the old west is dead, and the world has moved on. Dutch and his gang are stuck in the past. There is no such thing as an outlaw anymore, the law is too big and too present.
You can't rob trains anymore and get away with it. You have to help people and give them a good "Hey mister!" every once in a while.
But if you really want to rob trains, follow one from Annesburg into the tunnel up north. Wait until it gets to about the middle then shoot the conductor. You'll be 'Wanted', but the cops can't get there. Leave no one alive. Go slowly when you leave the tunnel to make sure the coast is clear or you might get a bounty.
