In the other games the hidden blade is just kinda a cool trick in your arsenal, whereas in the first game it's the whole religious finger-cutting Hashashin ritual thing, and it's just stupid. Way I see it a Hidden Blade would have the advantage of not being something you can drop or be disarmed of and since an Assassin is constantly climbing around it allows for it to always be within reach for a ledge kill (granted it being activated via wrist movement means there's a risk of accidentally triggering the blade while climbing). You could also conceivably hide it under a sleeve for extra sneakiness if you forego the gauntlet (which makes it specially funny when Ezio disguised as a minstrel says he can't wear the hidden blade with it because it'd be too conspicuous when that should be one of the more proper uses for it).
Of course it wouldn't be as convenient as a blade proper for actual fighting, and it's ultimately about giving a video game character a recognisable identity.

The blade was made without thinking about it at first. They never improved it until da vinci.
It was also to show dedication and solidarity with the leader who lost his finger using the blade to save his own life in an unsafe way and to prevent it from happening again.
It's more of a ritual and pre-emptive act than a requirement which has been a thing throughout ages. You do this so it's harder to leave the cause and to show dedication than to just do it for the lulz.

Tbh stabbing someone in passing on the street with a hidden blade would be much subtler than with a regular knive. To an onlooker you'd only be brushing their shoulder or pushing them aside as you pass by. Would be even less apparent with a poisoned blade, since the effect would take much longer to be visible

this entire misconception is that somehow the assassins are the only ones missing any fingers in the era of peak manual carpentry and masonry - nearly every environment visited in these games is heavily featured in societal stone and woodworks that would have nearly half the populace missing a poker or two as a commonplace thing

With the Yakuza you're intentionally trying to show that you're outside of society, it's specifically something people show off. It's like biker gangs in the USA getting tattoos on their necks; they're doing it on purpose to say "yeah, fuck you!"
