The idea is that since Alice can essentially proc assault twice you pair her with Jane for the assault crits so they do big damage. But since Jane also speeds up anomaly build up you also want to field her whenever you can so Alice can proc her assaults more often, though as far as rotations go you can just wing it and do whatever. Luckily Alice has quite a few long animations that you can swap into Jane while they play out.

not really, the "hardest shit" is literally designed to promote paypigging via forcing you to have several (premium) characters leveled. Miyabi will be able to hard carry you if built properly with her mono-ice team, but that still requires fairly hefty investment. If miyabi isn't your "one character" then no, not at all. You'll be able to do everything else, but the hardest shit, aka, deadly assault, shiyu defense and battle tower, all are designed around elemental weaknesses and team synergy, which you'll need to plan for by having the meta characters.

I'd say it's an ISSUE with the game. Compared to the beta, the meta and design shifted towards having one hypercarry damage dealer on the screen at all times, with a couple of off-field supports. Newer characters even got designed as off-fielders from the get go. I think it sucks when you only get to see and play 1/3 of the characters. The devs said they "listened", but their solution was Aftershocks - off-fielders popping out on-field to proc their attacks. So you're "seeing" them, but you're still not actually playing them.

Something to consider is that you don't need the level of optimization the video shows for 99% of content, you can beat almost anything in the game with a far more relaxed playstyle if that's your preference. Deadly Assault is the exception because it's a score attack mode, the other mode people often talk about in regards to endgame rewards (Shiyu) is a time attack mode, but it's lenient to get slightly-below-max-rewards and the difference in payout is small.

I personally think the game is a lot more fun playing with teams I like and using shitty gear, while not worrying about optimizing or executing rotations outside of stun windows.
