The Saturn version is absolutely the definitive version, but the PS1 port isn't awful (its also significantly easier to actually start playing since the average house probably has a dozen electronic devices inside it that are capable of playing PS1 games). Mostly he'll just be missing some graphical effects and he'll be stuck with the English VA.
Amusingly enough the Dreamcast version of Grandia 2 is also much better than the PS2 port, but it doesn't really matter since the PC remaster is available and cheap and is the best way to play it these days.

Emulating the Saturn is full retard when you can drop $100 on a nip console, $40 on a 5-in-1 memory cart that boots pirated games, and $10 on a stack of CDRs.
