Because the eagles are intelligent and sentient creatures, even if the films do a poor job of showing it. They're noble and mostly keep out of the affairs of other races.

In the books they aren't means of transport and they refuse to go into Mordor for fear of orc arrows and other fell witchcraft.

Also Sauron would see them coming miles away.

Those films are terrible and an awful source.
Also the hobbit is a children's book at heart so comparing it to LOTR is rather cheap; saying that with the death of Smaug and imminent invasion of Bolg in the book, there own homes and nests would have been endangered so they had a reason to fight. Same with the battle of the Black Gate. If they did nothing they would have suffered, doesn't mean they should automatically be a taxi surface.

The One Ring also affects animals. It affects everything from the literal angelic being who tells you outright that it would turn him into a tyrannical dictator. You would need to be above Sauron for it to not have any real effect on you. In an early draft it gets eaten by a fish in a river and the fish kills itself from the sheer madness of the ring. Now imagine being up 10,000 feet with the ring, its influence now acting upon creatures who you have no way of getting off of without falling to your death. The Eagles would have tried to kill the Fellowship somehow and if they made it to Mordor they would be attacked by Nazguls on Fell Beasts.

No matter what redditors try to say or state, every possible outcome was considered. The only way to truly destroy the ring was a stealth mission and casting it into the fires of Mt. Doom.
