No, rockstar has always been arcade nonsense where protagonists rack up thousands of kills, and law enforcement has the memory of a goldfish.

Trevor would have never gotten to that age acting like this, and would have been in prison long ago. Even this singular incident (he has many more that would also have him be caught instantly.) result in him being in prison forever.
Nobody makes any effort to clean any of this up. If we assume no witnesses are nearby (which there are, but lets unreasonably assume nobody talks to the police.) even the smallest possible police department of one guy (which even the most remote towns have about four local guys, on top of state, and federal.) would note the bloody boot print, shattered glass from the bottle thrown at him. Having received basic forensic training, he'd swab the bottle to see if any DNA was around.
Let's be REALLY generous and assume Trevor left no DNA on the bottle he was drinking from, or that it took so long that the sun baked anything away, or he botches the job, and missed it. A cursory examination of the scene has multiple residents nearby. A few knocks on nearby doors could have someone blow the case wide open, but let's assume to be very generous again that nobody just says "Yeah it's Trevor." or refuses to tell on the bulletproof video game man.
Even with all of this, he tracks blood, and remains onto his truck, and trailer. Having not cleaned either. Bloody interior of a truck combined with a murder a stones throw away? It doesn't take Sherlock Holmes to put that case together.
