The interface of a real guitar is much harder to get a grasp on. You need to be much more precise in your inputs, the inputs are more complicated and less intuitive, there's a much greater variety of techniques, there's much more theory to understand, there are less guard rails to keep you playing correctly (e.g. ensuring that you're in time), and there's more you need to do to ensure your instrument is performing correctly. Not saying that what this guy did isn't very impressive, just that it would take you way longer to master the guitar, since the skill ceiling is much higher and it's slower to get good at.

Becoming proficient at playing an instrument won't really get you much money. Unless you're one of the best in the world at it, or you craft music that happens to appeal to the masses, which in modern times doesn't rely at all at mastery of musical instruments (look at rap and pop). So playing an instrument works better as an active hobby, or as a way of attracting women
