You can even see the building blocks in each game as the systems get expanded upon. But then after VII they kinda gave up and just went story-focused forever. Which is a shame, because I'd have loved to see how the job system evolved past V in mainline. I guess Tactics would be that, which is great, but is another end point because Advance and A2 do their own thing. Materia is somewhat an attempt to combine Magicite with a more traditional job system but it never hit home for me the same way.
Needless to say I think V is the peak, but I wish you the best on your journey through FF.

The problem with Thieves in FE is you don't always need them if the map doesn't have doors or chests and most of them have bad stats so you have no reason to use them outside of getting chests and stealing statboosters. FE has had solutions for this as far back as FE5 with Tina's Thief staff, they don't necessarily need to be that strong but you can make the Thief a useful unit people want to deploy in ways other than combat and lower the annoyance of not having a Thief for a good stealable.

Shadow Dragon is a very basic remake, think FireRed/LeafGreen. It's a game that you can just jump into because there's very little story or dialogue, even characterization. The most you get is the latest recruit telling Marth that they're hooking up with his army. You pick guys you think are cool and work with their middling at best growths.

Override actually can be pretty absurd with enough strength, a lot of enemies start popping up and lining up more than you’d expect. I thought about wyvern kagetsu + sigurd. My only real problem with that is by chapter 18 is if im running kagetsu and an armor unit (i run either louis or diamant) both of the armored units will benifit more from the dex increase and defense increase compared to wyvern kagetsu who will have around 20def compared to general louis or diamants 28-32 def.
Also no s ranked weapons so less effective override vs armored units.
Kagetsu wyvern i always end up using byleth (luin on kagetsu wyvern could be the best engage weapon in game) or lief.

Archers are good since they almost always kill whatever they attack or soften them for a nooblet without needing to be healed. Not being good on the enemy turn isn't a very big deal since they make it a lot easier to pick off problem units for clean sweeps on offense, which is where most of the work happens.
