Personally, Gamecube version is a no brainer for me but figure it out for yourself.
I started a replay on Wii U and by the time I got Epona I switched to GC because of some absolutely insane bloom in some scenes. Its hit and miss, not always bad but when its bad the game is almost barely visible.
