There’s honestly not that much difference if it’s real time or not aside from the fact that enemies can catch you doing it if you’re not careful. It’s why stealth games and immersive sims are really the only times these minigames are real time.

The entire point is the risk of being spotted. The picking is a formality, the challenge is in getting to the door undetected and should also be having the time to pick the lock. If a guard can't walk up on you while picking, the risk is rendered very minimal.
TESO has the best picking minigame, a refined Oblivion picking that takes place in real time. There are many locked doors that are in the sightlines of patrolling guards.
MGSV has the best minigame-less picking, Snake takes about 5 seconds to pick the lock in real time while the player can look around a bit for anyone coming by.

I like Towers of Hanoi, but they always have a really slow interface. On Noveria in Mass Effect, you have a 4 tier easymode one that only takes 15 moves (and you can move to either 2 or 3 instead of just 3, making it even easier), but the actual interface for working it is so slow it takes like 2-3 minutes as opposed to 10 seconds.

How about just making fishing more engaging by giving players the option to just do it physically with spears or something like that. You go to a small stream or something like that where you can find fishes coursing through it and you're given the option to just straight up spear them.

Changes the game more from a waiting one where you have to mash buttons to reel them in into one where you have to actively move around, aim your cursor with the spear out then time your thrust just right so you can stab the fish as it goes by.

The only fishing minigame I liked is the one in Solatorobo because it has you harpooning giant hermit crabs with a mech. Its a shame there's no good gameplay videos of it for me to share so I can show what I mean.
