It's not unreasonable to ask the chef for modifiers, as long as it isn't a strain on the kitchen and profit isn't lost. Nicholson's character was more than willing to pay the full price of the meal for a fraction of the labor and food. The waitress was in the wrong for shutting down his request right away. I'd have fired her ass if she worked in my kitchen.

I don't know what kind of 3rd world country you live in, but in here it's completely normal for a customer to ask some detail changed in the order. Some times it costs a bit extra, most of the time not, depending on the request.

What you guys don't understand is that there's no worked out price for a side order of toast. Ditto for replacing tomatoes with tomatoes. You can't just do that and know what the cost will be. The menu was priced with strict knowledge about exactly what will be given for a specified price. Fucking with that on the fly is infeasible.

You can't order ingredients separately and have it run through the register for stock purposes unless that business has each item individually on the register.
The only real issue is that she wouldn't charge him for the chicken sandwich without chicken, as that appropriately accounts for the bread, and the customer is explicitly saying they're happy to pay an upcharge.
