Played both the first time and for an hour just now. It's a lot of fun, but now my right wrist is fucked, so I'm out for today. Wonder if not using the strap this time around made the difference, or if it's just because I now know what I'm doing so I'm moving much more intensely.

It's the opposite, it takes some time to 'click' and gets more fun from that point on. It's also extremely skill-intensive, the difference between new players and players who've played for two or three hours is already huge.

There's an option for it in the menu, but I haven't tried to see if it actually works in the demo.

Mouse mode only, and it's the only way it would make sense. Legs are not only suitable, I found using my legs to be far better than using my desk.

That's because everybody sucks. When you go against really good players you'll find team positioning gets really important and blocking opponents while your teammate has the ball is really useful.
For the best scoring, I've seen one really good player get consistent goals (even three-pointers) using tilts and bunny hops with the offense build. I play Guard myself so dunking is basically my only option to score because everything else is really likely to miss (and I suck at bunny hopping). The disadvantage of dunks of course is that you need to line up perfectly which is hard to do and easy to block.
