I find it comfy, but the gameplay takes some getting used to. It's more in-line with something like F-Zero or WipEOut than Mario Kart. It has a really solid singleplayer campaign with a shitton of unlockables and secrets, though, so that helps the adjustment.
I'd suggest you wait until they release 2.4 since that's supposed to be a semi-overhaul to the item and ring balance (rings being something akin to boost fuel in F-Zero), so it'd be better to get used to it once that's implemented.

Alkahest looks bullshotted so i don't trust it. I will remind you that to make a game like Dark Messiah that was still a pretty sizeable team at Arkane. And this is a very small studio, they're not capable of what they've set out to do. Not possible on their budget or size. How games were made a long time ago still has some relevance. Their trailer looks both scripted and manipulated, it's a rendered in engine trailer that LOOKS like gameplay. They even admitted that they stylized the animations to make it look good for said trailer. So a partial admission to scripting. Even if they only plan to do a smaller scope world, the actual combat they've shown doesn't look believable in regards to what they were doing with physics.

Looking forward to HLX I guess, though who knows when or if that'll actually be revealed.

I have never played haste, but I have played Spark 3, and from a look at Haste's trailer, it seems far more focused on being a non-tech-demo version of Sonic Green Hill Paradise or Sonic Utopia with the idea of carrying momentum through platforms and slopes through physics. Spark is closer to a traditional platformer with big focus on speed and heavily influenced by Sonic Adventure, so Haste seems to be aiming for something different. Almost reminds me of marble games in a way.

if you make too high ground eventually the earthquake meter fills up and the land gets broken apart 90% of the time causing an instant game over

no one who ever made their first project their magnum opus ever met their imaginary expectations. You should start small and scale up once you are familiar with what you need to do.
it requires discipline, but if you can stick it out you can be surprised with how much you can get done after a few months. take online classes if you need to, there are plenty of resources for learning the tools.

each of those disciplines are their own tower to climb.
for every single one you need to start from the bottom and work your way up. there's no easy way to go about it, game dev as a solo effort means you have to do literally everything unless you are lucky enough to find someone who is mentally stable, on the same wavelength as you, and has skills that you do not personally have that you could collaborate with.
it may be preferable for you to start with making smaller games so you can familiarize yourself with the game creation and iteration process. there's also music and SFX that you haven't acknowledged, that's another skillset you'll have to pull from (or at least know how to look through royalty free sound libraries)
don't be discouraged, everyone has to start somewhere. and you're at the same level as a freshman that hasn't even taken the first elective courses.
