Deltarune has like, four ships of note and some degenerate fujo nonsense no one takes seriously. And of those the only one that really flares up into shipping wars is who Susie gets with, which at this point is mostly just shitting on the Cult of Yuri because they're dicks and its' funny.

Not really, even the litteral character creator bit in chapter 1 has only spat out like one or two OCs I can think of.

Other than the autistic sperging about not wanting Ralsei to wear the hat again, there's one out-of-the-way secret boss who exists because there was time to kill between wrapping Chapter 4 and the Switch 2 launch, and is mostly just a bit about how wacky the theories people came up with were.

Okay real talk I don't actually know what was being gotten at with this one. Other than melties about retarded brainrot theories not being cannon, I can't actually think of many things in Deltarune's plot so far that have actually subverted previous buildup. Sure, Mike didn't matter, but he was mentioned in like one line of dialog from the funny puppet man. The actual plot has actually been pretty straightforwards I think.
