BG and KOTOR are both pretty good, but you'll probably find the UI finnicky to use. For KOTOR specifically, I strongly recommend you mod it for widescreen first unless you like playing in 4:3 resolutions.

BG1+2+ToB should be played on one character. It's long and you have to worry about timing so get ready to buckle down.
Jade Empire is a fun little romp, play whenever.
KOTOR is about in between the two. Longer and more mechanical than Jade Empire but much less so that a BG saga playthrough.
