It's a boring country where nothing happens and that doesn't make for good games. Topographically it's also extremely flat which doesn't make for good level design.
But the most important issue is that modern game dev is all about buying pre-made store assets and building the game world out of them and no one makes Australian assets which is why even when there are games set in Australia they look nothing like Australia.
