Getting into JRPGs
I want to force myself into playing JRPGs because in the recent years I got addicted to high dopamine games like first person shooter, etc. I tried Dragon Quest XI a year ago and got burned out after just a few hours (the repeating music mainly). But I made some nice memories that last to this day which is amazing. It reminded me of the few rpgs I played as a kid that I'm still fond of. So I got to the conclusion that those shitty dopamine addicting games are of no worth and thus I want to get into RPGs again. I'm looking for ones with a great artstyle, music, nice towns and a world to get lost in. Any suggestions?

Honestly anon, you're in the right mindset already. JRPGs are all about soaking in vibes, not chasing dopamine hits every 10 seconds. If DQXI hooked you even a little, you're definitely not beyond saving. Try easing into it with something like Ni no Kuni-fantastic Ghibli-esque art, beautiful music, and charming towns with that classic JRPG feel. Or maybe Final Fantasy IX, if you're open to PS1 era - it's basically a love letter to the genre. Let yourself chill, take it slow, talk to the NPCs, and appreciate the coziness. You'll detox from FPS brain in no time.

Pretty much all of Japanese media has this problem (JRPGs with their separate battle screen being the most egregious), the best you can do is turn the music volume down and force yourself to get used to it. Once the music is no longer front and centre and serve its original purpose (as BACKGROUND music) it's fucking great. Try the PS1 era of games--modern ones such as DQXI with their lush, overproduced orchestral music are too in-your-face for you to get lost in

Are you sure repeating music is the problem and not just that games music? Dragon Quest music is basically the same everywhere and to top it off, the producer is so autistic he doesn't want people from outside Japan to enjoy it.
Really, they had an orchestrated OST while we had fucking midi sounds. It was genuinely the only game in my life where at some point I turned off the music as it physically hurt my ears. So yeah, that game's soundtrack is just notoriously bad

I'd say give a try to the old atelier games, they have a nifty feature where you can just make insanely strong bombs by switching around modifiers and you could just mass produce them by harvesting certain elemental clusters

Abyss, Vesperia, Eternia, and Graces are better. Symphonia is one of the weaker entries in the series.

If you mean this in the literal sense, then you're going to be disappointed. The genre is painfully linear as a rule because it typically makes for better narrative and the comfiest stories/worlds tend to have more linear plots.
If you mean it literally then combined with the other aspects you're searching for Final Fantasy XII and the Xenoblade games will be your best bet.
If you meant it figuratively, Chrono Trigger, Final Fantasy IV, V, VI, X, Wild Arms 3, and Grandia have what you need.

I think it was one of very few JRPGs on the Gamecube so it got an inordinate amount of attention from people who werenโ€™t Tales fans and may not have even known there were other games in the franchise. I suspect the people who praise it so heavily havenโ€™t actually played any other Tales games.

It's probably the case. Anyone whose first console was N64 and then got a Gamecube after would have only played Paper Mario and Quest 64 if they even got around to those two and ToS would have been their first traditional JRPG. Maybe they had pokemon on their gameboys. And outside of that and Skies, I remember GC being starved of traditional party-based JRPGs, so for a lot of people I can see it may have been their earliest game where you get the world map, the party, and all that and they had little to compare it to.

I'd argue something like the Raidou Kuzunoha games might be a good mix of action and rpg for you. They're kind of scuffed but they're fun, and look better then the old Digital Devil Saga games imho.
Besides, going cold turkey on the dopamine you're expecting might not be the best thing. There's no harm in trying something more along the lines of Xenoblade Chronicals before you try getting into Dragon Quest again.

The Persona games are very easy to get into because of the modern setting, but in case you want something more fantasy-like then Final Fantasy X is a great place to start.

bravely default is incredible, i recommend that game. FFX is also fun. most SMT games are decent enough, strange journey was the first one i played to get into the series.

I'm a big fan of that one, it has a really fun battle system. Just be aware that it's FAR from a traditional JRPG, don't expect the usual stuff and just enjoy the ride.

Orchestrals replaced them with the Definitive Edition later on.

Seconding Raidou especially the first game cause it's also relatively short excluding any kind of optional stuff. I finished it twice and both playthrough clocked in at around 30 ish hours and even then I did some dicking around. Should be a nice warm up before bigger JRPGs.

Romancing SaGa 1 Remake is Minstrel Song on PS2 (which did get a Remaster a year or two ago)
Romancing SaGa 2 Revenge of the Seven is the brand new one that just came out
Both good in their own way, but RS2 Revenge of the Seven is way more beginner friendly
