In order of importance:
1. "realistic" controls RDR2 style
2. The regular R* mission structure: you have to do exactly what we tell you or you fail
3. If it's too neutered, I don't need it to be super edgy but one of the appeal of GTA is the satire
I sincerely doubt it's gonna be better than V or that good period. 1 billion dollar budget and 6 million developers sounds like a disaster in the making, you can't make something good when that kind of money is at stake and that many people are working on it, you at best get a very polished but also very bland and generic game and this is an order of magnitude bigger than anything Rockstar made in the past.

I hope it'll fail, if not financially (impossible, this is never going to flop as much as I'd love it to) then critically which I do see as likely, V already felt stale back in 2013 with zero (0) innovations to the open world formula, at least Watch Dogs which came out that same year added shit like environmental manipulation and stealth, it at least TRIED to change shit up a bit. I expect Rock$tar will do the bare minimum, as usual, or worse, take the painfully "realistic" aspects of RDR2 and inject them into GTA 6, God imagine the boredom
