The order of the hour is referenced since daggerfall but their whole aesthetic wasn't really codified till ESO

It's between High Rock and the Systres for Bretons (there was no indication of the Systres being Breton territory until ESO). Also Bosmer are given a choice between Grahtwood and Reaper’s March, neither of which were named in the lore before ESO either.

I fucking hate youtube armchair historians. The idea that full plate with mail was some sort of "default" for everyone wearing plate armor is fucking retarded, and is generally just historical shorthand for the ideal battle dress, but realistically only the wealthiest warriors would have been able to afford both. The reality is, plate armor could've, and was, worn without mail, and many just wore a gambeson or arming doublet underneath instead.

The Knight class usually has Restoration as a Major/Minor skill, so a Paladin could fall within that umbrella. You could take the more generic branding of Knight to be there as a way to allow for more options for role-playing
