Parrying is satisfying and rewards skill and risk-taking. It is a good mechanic that fits almost every game.

But the real reason is simply that games are made by people with no ideas of their own, copying each others' homework.

quick and dirty path to give your game a high skill requirement. ironically fighting games which invented the technique do anything in their power to not feature it or cripple it in some way.

The video game industry has always been monstrously shameless about copying ideas from successful games and putting them into their own, to the point homogenization becomes unbearable until some other new thing comes and breaks the cycle, only to become the source of it all starting again. Resident Evil 4, Demons Souls, etc
This happened when the industry was brimming with talent, think about how much of that talent has left and not been replaced by anything except worthless barely functioning retards

The same reason everything was a platformer in the 80s and 90s and the same reason everything was a slow shooter in the 2010s. Developers follow popular trends. You'd realize this if you hadn't only been playing games or browsing the internet for 20 minutes, assuming you weren't fishing for Reddit updoots.
