I think people exaggerate the difference, if anything. The games mostly play fundamentally similarly on Hard/Maddening. Only FE12 and Awakening have extreme high difficulties. 3H apparently has a lot of untested stat inflation, but I'm not that familiar with that game. But Fates doesn't even change enemy stats, for example. It leads to this perception that high difficulty modes are punishing when they're really not that bad, if you understand what types of strategies are generally effective in Fire Emblem.
