Only ever played the first game (Secret of Mana) so can't say anything about her character

Never actually finished Secret of Mana, even though I played both it and Seiken Densetsu 3 already back in the late '90s on emulators. Even for SD3 I only finished it much later with my brother. Played some hacks/mods for it with him too. Trials of Mana 3D was cool too. Almost endearingly faithful to the original, just with 3D maps. Sucks that it doesn't have two-player mode like the original, though.

It was restricted to Japan and I think a few other Asian countries, you had to use a VPN to be able to play it back when it was officially available.
I never got to play it when it was live but from what I can tell private servers are offering a better experience than live because they cut down on a lot of the grind and some other questionable decisions that were made because the game was F2P

Dogma Rising is probably the best server right now, there's all kinds of quests and content available, the private server has advanced quite a bit, it's not a full 100% restored experience right now, but there's quite a lot of content to go through, lots of side quests, main quests, special content like EXMs, BBM, proper progression.
There's 3 private servers at the moment by the way, DDON.org is the oldest but shittiest one, it's grindy as fuck and not very polished, it does have the most players though.
Then there's Dogma Rising which eased a lot of the grinding and has some nice custom QoL stuff, there's a 3rd one called Legacy but I have not tried it, also just so you know, there's really no private server out there that offers an authentic OG experience and maybe that's for the best since the OG game was grindy and had some disgusting time gates if you didn't pay for a sub.
