Yes I make it myself and no roux doesn't take 40 minutes. Butter and flour dark browned, and that is your roux. Also file powder because I don't use okra. Sweating your trinity does take a long time, but the temp is so low you can do something else like clean the house since you just need to stir it every ten minutes or so. Also I do add tomatoes to my gumbo because that is the one thing creole gumbo does better than cajun gumbo. I don't make my own andouille anymore because my butcher makes excellent andouille and it is way too time consuming and a mess to clean up.
