Skyblivion will be the first one. After that maaaaybe Roscrea and/or Cyrodiil from the Beyond Skyrim series of projects. Skywind doesn't advertise itself as much as the others I feel but whenever they do show progress it's pretty much 1:1 translating Morrowind's in-depth mechanics into Skyrim. Fully standalone game universes, I believe only Enderal exists. If you just mean larger quest mods that still take place in the TES universe like Forgotten City, try out Moonpath to Elsweyr. It's a classic, released merely a couple months after Skyrim first came out. Some other ones in no particular order might be Helgen Reborn, Moon And Star, Clockwork (this is a spooky one), Beyond Reach, Gray Cowl of Nocturnal, Sirenroot and last but not least, while technically Creations and not mods, Coven of Crones and especially Bards College Expansion are pretty fucking great.
