What game truly desensitized you to digital violence? The game where, after you had been through it, you dropped any remaining apprehension about blood and gore in gaming.

video game violence isn't like real life violence. There's some horror movies I won't watch at all because of gore or murders when I am totally unbothered by the injuries I see every day at my job as a paramedic.

so, no, you aren't a tough guy for playing video games.

You could make an argument for Goldeneye, I would sit there for hours crunching guys on Runway, but that is all audio. I suppose Gears of War and Oblivion at the same time, one for the heinous over the top stuff and the other for stuff like rotting and dismembered corpses and body parts you pick up and mess with.

None such, although some UT2004 gibs, Doom-Doom2 and MK3 ten ribcages-five lehs are something completely different from nuMK snuff pornography.
One of the first games i have encountered with any kind of such violence was DOS Prince of Persia with all those spikes when i were around 4 years old or so. There was also brothers Grimm's fairy tales, some "street legend" scary stories about various "Blue Teeth child-eating plant director", "black curtains, that hypnotise and choke their victims", "socks, bought at some strange market, that eat your legs to the bone" etc and other such sources, so, despite i, of course, had encountered a lot of kind things, i had also encountered a lot of violent media.
It is, however, to be said, that, as i have mentioned before, there is fun violence (UT, old MK), scary violence (various horrors) and disgusting disturbing violence (nu-MK). Three different types with three different experiences.

in general, just growing through all the hysterical "protect the kids" campaigns solidified my belief of "it's just fiction," and kids that aren't already mentally ill can process whatever just fine

I don't ever remember violence in videogames being particularly shocking to me. Doom and quake were scary when wee lil babby anon played them but the actual slashing/shooting/blowing stuff never really bothered me, and to this day I have some strange fascination with games that give me a certain granularity on the death and harm I can inflict in it. I'll install ACE in arma 3 and have fun shooting dudes in various places with various calibers and seeing what happens (I also just like playing medic in milsim games). I'll use medieval sword autism games like a stress ball because running someone through with a longsword never stops being satisfying, and getting that perfect swing where a few inches of blade passes through their neck like butter as they slowly start to gurgle and bleed out is even better. If I can play with corpses and gore I'll generally be like a kid in a candy store.

In real life I don't have any weird violent fantasies and get that grossed out feeling deep in my taint whenever I see a wound on someone else. There's probably a little psychopath living in my head that just really likes to indulge when there's no consequences and no one getting hurt. Probably not a warning sign, right?

I've become less desensitized to it as ive got older. I dont like to see overly violent stuff in games and movies now. I find it very offputting.
