Any level that involves large moving vehicles are my favorites. It's basically why balloon race was my favorite custom level in TF2 and why I had a hard on for any level in Sven co-op that involved trains, even ones where they were buggy as fuck and prone to gibbing you if you stood in the wrong spot while they were moving

Dunno if it really counts as a level type but for me it's levels where the player has already won/or is pushed to his limits and gets to cockslap all the enemies with his op weapon/skill/power/etc, see picrel. Riverboat levels are also good (Blood Cryptic Passage) albeit they are basically just train levels.
