Literally just play them on easy. Tim Rogers called this "borrowing the experience of someone who was incredible" and he was right. That's what the mode is there for.
Actually you know what anon I just had an idea that I think you would enjoy a lot. Try loading up the original dungeon siege, but make it so you have a full party of custom dudes you control. This way you can command a small tactical unit without over stressing about management. I enjoyed doing this when I was younger and it scratched the same itch as strategy and simulation games. Or just play Tropico.
