Honestly just pick a game, any game at all, and once it's finished downloading turn off your Internet and tell yourself you can't do anything else until you reach 100% completion in it. Even if it'd something that demands hundreds of hours. Make sure to never consult a guide or be tempted to go back online unless it's for work or whatever.

I was joking. Reading a book usually works for me. Programming does too. Anything creative or related to the imagination more than consumption will do the trick I think.

Probably something with very self directed fun and lots of creativity.
I'm thinking minecraft, solo with no (minimal QOL) mods. Just set whatever you want for goals, what you want to build. Its slow paced and requires holding your attention for long periods of relatively low stimulation.
