Almost did that with FF13
I got the boss to 20% health, he used an instant death spell on my leader, I said fuck it, deleted the game and proceeded to watch the ending on youtube

I beat the game

I did it with DMC 4.

I died twice to ganon in OoT at the very end, lost interest and never finished it

I did this with the final boss of Dark Souls 3. Played right up until the end and kept getting my ass kicked by him. Didn't touch the game again until years and years later when Elden Ring came out. I went back to finally beat him before I started playing Elden Ring. Was pretty funny
