It depends. If I replay a game, I usually go with options I didn't choose the first time, and swapping to a female character is often step one. Sometimes it matters, like kotor2, sometimes it doesn't, like the original baldurs gate, and sometimes it changes things but not in any meaningful gameplay way, like mass effect only impacting romance but with tons of different dialogue changes.
Gotta change things up.
