I've also experienced about 4 and a half hours of characters talking at me, and 30 minutes of actual gameplay up to this point. Why do people like this series?

People genuinely only like it for the dating sim elements. That’s something I think people don’t want to admit.

P5 in particular is pretty bad about taking forever to start the game
But in the first place people play Persona expecting/wanting it to be 50% VN so if that's not what you're looking for then maybe don't play a story based JRPG

What is actually appealing about the social shit is the social links in general, people like hanging out with characters and doing their mini arcs. You're not dating Yusuke, Tora, Sojiro, or the arms dealer guy, but they're enjoyable anyway. I also like Mishima's but he gets bullied a lot.

It’s half-baked as hell, yeah. The "dating" boils down to picking the most obvious dialogue choices and getting rewarded with a static image and maybe a cutscene if you're lucky. It’s more like a checklist than an actual relationship mechanic. Anyone calling this a dating sim has never touched stuff like Tokimeki or even modern VN hybrids. The appeal is less "wow I can date anime girls" and more "the game told me I’m cool and people like when I'm around" which is... well, pretty telling.

Persona games have notoriously bad pacing. You have to be in it for the long haul.
SMT games typically get to the gameplay a lot faster.
