The only way you're going to fix most of those "outliers" is by directly kneecapping gear and skills or completely reworking core game mechanics. Starting with the Drake Sword aside, something like the Sorcerer's Staff in BS1 is valuable purely because it reduces MP costs by half, and then to zero. The fact that Dusk Crown Rings exist in the same game is just icing on the cake, but trying to nerf that combo either fucks the weapon, fucks the rings, or if you go full retard fucks the spells. You also still have shit like Shadowmoon Blade's infinite scaling, Bow+Leaf's ultimate (companions in general are a fucking can of worms), and plenty of other retarded shit that just fucking exists in the game like the covenant rings.
BS2 is arguably even worse about shit, starting with items being a free action meaning you can just buff yourself to the fucking moon (thanks multiplicative stat mods) at the start of a turn, and heal up any damage you take between/during turns for free. Add in the mere existence of the Chaos Dungeon and everything associated with it along with it being accessible at basically the very start of the game, and being able to consistently stack over a half dozen actions for no meaningful downside, and even shitty weapons can breeze through 99% of the game with virtually zero issue, let alone completely broken weapons like Hans. You also just have blatant cheese strats like the ever popular gunclock, the less popular and somewhat less broken knifespam, or the less popular but even more broken crit Chaos Blast.

I'd say to do an SL1 if you really want to fuck around with the combat. Not dying really isn't that much of a challenge unless you're playing blind or caught flatfooted from not paying attention, and Difficulty 9 is just stat bloat.

This game is complete bullshit. Your first boss fight is a fucking dragon, literally 5 minutes in, with no opportunity to upgrade your stats. His health bar is 20x your size and he has an unavoidable attack that one shots you. I know you're supposed to die to get to the hub area, but I HATE the concept of unwinnable fights, with a passion. I was about to drop it right then and there, but decided to give it one more chance. I looked up a guide and picked up the hidden rings that increase your soul and item drop rates and grinded for an hour. It was extremely fucking annoying at first because you only get 2 ring slots, so I always had to have at least 1 dedicated to something combat oriented, which made this whole thing last longer than it should. Then I went north to that forest and found a weird plant that gives you a spray for fairies. I came back to try it out and oh God how can anyone with a right mind fap to this? But I admit raping those cunt fairies to death over and over again was fun, the only bit of fun I had so far. So anyway back on track. Most enemies the forest were dying in one hit, unless they dodged (again fucking pissing me off) Untill suddenly music starts playing and out of fucking nowhere comes a knight on a horse and absolutely wrecks me, before I even have a chance to make a move. What the fuck? Rinse, repeat 7 times and each fucking time I die I have to walk all the way back through 3 areas, just like in a souls game, but unlike a souls game I have to fight EVERY SINGLE ENEMY on the way, BECAUSE NOBODY THOUGHT OF ADDING SOMETHING AS BASIC AS RUN FUNCTION. But that one time the creator's incompetence actually proved useful. Enemies sometimes get stuck on terrain and I managed to get that knight stuck long enough for me to walk to the next area and thank God there was a bonfire there. I wasn't thanking him for long though, because the next boss was literally Ornstein and Smough. DO NOT LISTEN TO THE SHILLS, THIS GAME SUCKS DICK.
