Like one change I hate is swapping Gideon Ofnir for their OC boss 'Skarde' who is basically every Crucible Knight smashed together.
My issue is that this results in two very similar boss fights back to back with one another. The New Boss and Godfrey are very similar bosses that are tanky poise stacks who are relentlessly aggressive and quite fast.
Elden Ring, for all its boss reuse, usually avoids this well. When you fight one type of boss, then you'll fight another next. So that, at least on a linear run through the game, you'll have a decent feeling of diversity and ebb and flow to each encounter. Back to back bosses like Goldfrey and Morgott are fought very differently, for example.
The Convergence Devs didn't really get this that well.
The same happens in Farum Azula. Where Godskin Duo was swapped out for a reskinned Guardian Lion boss with lightning magic that fights very similar to phase 2 Maliketh, but feels tankier.
They seemed to have been more interested in making cool changes, than paying attention to game flow, imo.
