With MKB/Controller you probably end up looking at some cool animations while barely having any input, with VR you get all the input you need, but don't get to look at the cool stuff.
Also all the enemies would need to just stand there

The hand-wavey explanation for gun kata working doesn't rely on superhuman speed, it's giga-autistic savant rote learning of hundreds of thousands of gunfight scenarios to shoot where the baddies probably are and not putting your body where the baddies are probably going to shoot, hence the 'kata' aspect.

Story-wise, Gun Kata is a sequence of movements developed after years of analyzing the most probable reactions of enemies to each preceding action. Every move is designed either to evade incoming fire—since patterns show what opponents are most likely to do next—or to throw them off balance. In essence, Gun Kata works like an extended combo system, where each transition is calculated for maximum efficiency, almost as if the fighter were granted iframes during the choreography.
