>hiragana only mode
You're handicapping yourself into never learning Japanese if you do this.

take my advice and start with something that has furigana. also avoid older games that have kanji that are difficult to discern.
t. N5 that never made it

You need a jrpg aimed at kids with furigana and voice acting. Like Yokai watch or Inazuma eleven GO series.

They just used simpler words like ue instead of kaijou and ohanashi instead of danshou.

it would have been highly rewarding 20 years ago.
Now we're at the point where all the worthwhile jrpgs either got localizations or fan translations.

It's not hiragana mode and kanji mode, it's kids mode and adult mode.

Search for kid's games, they probably have the easier grammar for someone who's starting to dive into this, and they probably don't use much kanjis but write everything in hiragana and katakana, otherwise, if you already got a proper understanding of japanese and want to widen your knowledge, just pick some random game you wanna play, and put the language in japanese.

You would be surprised, honestly. Kids pick up on grammar pretty quickly and they're just exposed to the gamut of natural conversation from birth, so by the time they're five or six, while they won't be perfect they'll probably have an intuitive grasp of 90-95% of the grammar applicable to ordinary fiction, but they haven't had time to develop a comprehensive vocabulary.
Adult language learners tend to come from the opposite direction of having a passable vocabulary much earlier than their grammar skills progress to the level you'll need for anything more advanced than "Spot the Dog" or textbook examples and set phrases.
It's a lot easier for an adult to just memorize lists of stuff than it is for basically anybody to understand and be able to use a flexible system like grammar.

Reminder to speedrun learning japanese because the AIPAC party is trying to ban anime and everything japanese from amerimuttland, which will more than likely stop everything from getting any localization at all.
