NMS was also built from scratch around the structure they wanted it to have.

Starfield took an engine not meant for that kind of structure and tried to force it in, leading to "loading screens: the game".

No one ever says how nms is good they just say it's good. What do you even do in the game? From what I understand is you just fly to the center of the galaxy that doesn't sound very fun I have a feeling it's all cope.

Well, there's plenty of things you 'can' do but are pretty inconsequential in the end.
You can do some basebuilding which can be fun for a moment, you can do the quests which boils down to fetch/kill quests, you can learn the alien languages, you can go to anomaly and do shit with other people, you can hunt for gear upgrades and/or cool ships. But in the end you'll always come back to "hold LMB to mine this mineral" kind of gameplay.
My experience with it is that I played it for 90 hours and dropped it.

So it's one of those indie games that people praise for busywork another one off the top of my head is kenshi I bet it has the same gameplay loop and you have to pretend to have fun with the only good part of the game being the exploration.

I like Starfield but it's no contest. NMS still pumped out large updates for free with a smaller team while Starfield could easily do the same with only losing a few mill out of its total profits but the biggest update was one land Rover and maps lol

the thing that bothers me the most about no man's sky is that while there is a gargantuan amount of content, the actual sci-fi part of the game is very lacking, and you end up just scouring the galaxy for a nice planet to build your massive mansion on.
there are no moons, no orbits, nothing but a static png of the sun rotating around the current "system" playfield
it's so goddamn boring

Supposedly they planned to do all that, at least the orbits, but playtesting showed it was too confusing for players...
