They don't really exist for 3rd and 4th gen systems because we know them all already.
But there are truckloads on gen 5 and 6 systems.

That's not true. Tons of games just slip by unnoticed, and continue to with the passage of time.
But I can understand being really into games, that it seems harder to find games you haven't seen before.
A good method for me is to simply search a dev you like and look at the rest of their catalog. You'd be surprised.

While this argument is true on a technical level, it's wrong on the practical level, for it makes hidden gems a binary. The issue is that hidden games is dependent on the eye of the beholder. If you are someone who never played a single FPS in your life, the whole genre might be a hidden gem for you. But if you played them all from Catacomb 3-D to Doom 2, then you'll roll your eyes if someone says Kingpin is a hidden gem.
The point of hidden gems (to make them useful) is to bring attention to games that are not discussed/in vogue, so people who did not get on it when it came out, when it was popularity, or just never heard of it, have the opportunity to join in and participate.
not only that, it also implies that someone's consent in a game is what matters.

It implies that someone's enjoyment of the game matters. If I me and one other guy are the only players of a game, then that game is a hidden gem. I do not care if it's considered dog shit, because I enjoy it. Popularity even within the target audience does not equate to quality.

You haven't even begun to unearth the hidden gems of video games until you've started playing Taiwanese Diablo clones from the 90s. Frankly, Chivalrous Heroes 3 is the greatest RPG ever made that 2 people in the whole world even know about
