I play on normal because its usually the dev intended level of balance. Hard is reserved for games that are good enough to be worth a second play through or short games that hide extra content as reward for completing a higher challenge.

Easy mode is universally boring unless there is a story attatched to the game that is way better than its gameplay.

i played dark souls with a -75% damage reduction mod because i was depressed and too busy with school work at the time to give it my all with the game. i felt autistically guilty about it that i replayed the game a year later as the way it was intended and then i just dropped it after Ornstein and Smough cuz i stopped caring

I just beat some level 22 songs on pump it up rise, never used easy mode and even when replaying old games I never use savestates or anything like that.
