The vast majority of racing games, even 'sims' are played mostly on keyboard or gamepad including the people at the top of leaderboards. It is similar to the FPS situation in that the game has to partially play itself for you in order to make up for the loss of precision and range.
FPS aim assist is fundamentally much worse though. It often makes an average controller player aim as well or better than the best mouse players while it is active, so analog stick can "be competitive." It also tends to have instant reaction times while humans are much slower. You don't usually get such big advantages in racing games. It's also more unjust because there are other options for controller like motion sensing aim which are decent enough to make aim assist unnecessary
(and before console babies complains about motion controls - the mouse is a motion controller).
